The pancakes come out fluffy and literally melt in your mouth.<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 2\/3 cups of flour<\/li>\n<li>1 2\/3 cups of plain kefir<\/li>\n<li>2 tablespoons of sugar (I used coconut sugar used in this recipe)<\/li>\n<li>2 teaspoons of baking powder<\/li>\n<li>1\/2 teaspoon of baking soda<\/li>\n<li>1 teaspoon of salt<\/li>\n<li>1 egg<\/li>\n<li>1\/2 tablespoons of lemon juice<\/li>\n<li>2 tablespoons of sunflower oil<\/li>\n<\/ul>\n<p>Process:<\/p>\n<p>First turn on your oven to 350F. I.e. as soon as you see that all the flour was incorporated walk away, and stop mixing. If you continue you will get more and more gluten developed and pancakes will come out rubbery. It&#8217;s ok if mixture a little bit lumpy:<\/p>\n<p><img loading=\"lazy\" class=\"alignnone size-medium wp-image-210\" src=\"http:\/\/food-fedulov-com.intersog.com\/wp-content\/uploads\/2016\/09\/2016-09-25-06.57.42-300x169.jpg\" alt=\"2016-09-25-06-57-42\" width=\"300\" height=\"169\" srcset=\"http:\/\/food.fedulov.com\/wp-content\/uploads\/2016\/09\/2016-09-25-06.57.42-300x169.jpg 300w, http:\/\/food.fedulov.com\/wp-content\/uploads\/2016\/09\/2016-09-25-06.57.42-768x432.jpg 768w, http:\/\/food.fedulov.com\/wp-content\/uploads\/2016\/09\/2016-09-25-06.57.42-1024x576.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>Heat up your favorite skillet (mine is cast iron) with enough sunflower oil to cover the bottom on medium low heat. Using your favorite spoon (I use 3 tablespoons ice-cream scoop) pour batter onto the skillet:<\/p>\n<p><img loading=\"lazy\" class=\"alignnone size-medium wp-image-211\" src=\"http:\/\/food-fedulov-com.intersog.com\/wp-content\/uploads\/2016\/09\/2016-09-25-07.00.05-300x169.jpg\" alt=\"2016-09-25-07-00-05\" width=\"300\" height=\"169\" srcset=\"http:\/\/food.fedulov.com\/wp-content\/uploads\/2016\/09\/2016-09-25-07.00.05-300x169.jpg 300w, http:\/\/food.fedulov.com\/wp-content\/uploads\/2016\/09\/2016-09-25-07.00.05-768x432.jpg 768w, http:\/\/food.fedulov.com\/wp-content\/uploads\/2016\/09\/2016-09-25-07.00.05-1024x576.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>Once brown on one side flip them over:<\/p>\n<p><img loading=\"lazy\" class=\"alignnone size-medium wp-image-212\" src=\"http:\/\/food-fedulov-com.intersog.com\/wp-content\/uploads\/2016\/09\/2016-09-25-07.05.02-300x169.jpg\" alt=\"2016-09-25-07-05-02\" width=\"300\" height=\"169\" srcset=\"http:\/\/food.fedulov.com\/wp-content\/uploads\/2016\/09\/2016-09-25-07.05.02-300x169.jpg 300w, http:\/\/food.fedulov.com\/wp-content\/uploads\/2016\/09\/2016-09-25-07.05.02-768x432.jpg 768w, http:\/\/food.fedulov.com\/wp-content\/uploads\/2016\/09\/2016-09-25-07.05.02-1024x576.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>Once the other side is golden brown as well take them off put on a parchment paper lined baking sheet and put them into preheated oven for about 5 to 8 minutes. You can skip this step if you want but I feel it&#8217;s necessary to make the baking power work to it&#8217;s full potential. Repeat with another batch of batter.
